Creative Adventures with: Food

I have never been a great cook. The running joke is that whenever someone would ask if I cook, I would always answer with "Well, I have great potential". The truth about my cooking is that I would LOVE to know how to cook intuitively and creatively. But, my best method of cooking is with a trusty cookbook or recipe that I can follow to a tee. I think that is why I love baking so much. Baking is straightforward with tride and true promised results. Cooking, eh, not so predictable. So... let's talk about that potential...

The irony with this first food post is that there is absolutely no cooking involved :). The recipe comes from a book called The Raw Family which embraces eating raw food, of course! I first had this soup at a friend's house, a teeny tiny bowl less than a cup. It disappeared in 3 seconds leaving me wanting more. The best news--all that is needed is a blender and some simple ingredients.

Okay, so don't laugh, here is my creative adventure with this recipe. I added cilantro. I had a bunch leftover from the holidays and thought "Hmmm, I wonder..." It worked perfectly. Hubs not being a big celery fan, totally appreciated this addition. So, here it is!! Go give it a whirl!

Cold Celery Soup with Cilantro: (note: for celery lovers or wannabe lovers)

One bunch of celery trimmed
4 cups water
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 cup (or to taste) cilantro
1-2 tsps of sea salt

Place everything in the blender, blend for a few seconds--done!

Add pepper to taste
Add 1 chopped avocado
(Optional: in lieu of cilantro you can blend 2 teaspoons of honey or raisons for a sweet addition)

That is it!!! Enjoy!!
